New this year at the Colorado Dragon Boat Festival is the Culinary Dojo, a cooking demonstration tent where local chefs will show you how to cook various Asian dishes all weekend. You’ll be able to sample the food and hear stories from the chefs on how the dishes represent their culture, from the Philippines and Vietnam to India and Hawaii.
Chefs scheduled to be on hand include Mary Nguyen, the talent behind several award-winning local eateries; Leah Eveleigh, who got her start serving Filipino food at CDBF, and earlier this year won an episode of the Food Network's "Cutthroat Kitchen"; Nita Chitvej, who has deep roots in Denver's foodie scene and runs Chada Thai Restaurant; and Biju Thomas, who will cook up Indian food but is well-known in this area as the chef for the USA Pro Cycling Challenge and other cycling events (he's opening a curry restaurant in RiNo).
